Fresh and fruity cheesecake
Create this easy, fresh and fruity cheesecake for your next venue or get together. You don't need an oven for this cake!
Ingredients:
500 g Philadelphia cream cheese
250 g Digestive cookies
1,5 dl sugar
2 dl cream
60 g butter 1/2 lemon
1/2 lime
4 gelatin sheets
Bowl of various berries

Crush your cookies into a fine powder and mix it up with melted butter until it becomes a sticky mixture. Push the mixture at the bottom of the baking tray and put it in the freezer to cool down and become solid. Mix cream cheese with lemon and lime juice. Mix your cream and sugar until it becomes thick cream. Melt your gelatins for 5-10min in cold water and slowly heat it to lukewarm on the stove until it becomes a flowy liquid. (Be careful not to burn it or turn it too hot so it won't melt your cream.) Mix the both mixtures properly. Add slowly the flowy gelatin while mixing the mixture. Add the mixture on the cooled baking tray and let the cake sit in the fridge for a 3-5 hours until it becomes solid. Chop various berries and fruits that you love to decorate your cake.
Tip: You can add a gelatin coat on top of your cake for the berries to last longer.
